I have purchased three (3) of these over the last year or so. ALWAYS GREAT. Although seasoned in part with nitrites, the smokey flavor if so good I: (1) Save all bones to boil and cook with my 15 bean soups and stews (2) Slice 1/2 to 3/4 inch slabs of the ham and GRILL them as a favorite meal (3) Dice or cube any odd pieces for added meat in my bean/soups/stews (4) Treat my frequent house-guest to the ham (1/4 to 1/2 inch sliced pieces) pan fried with eggs for breakfast and of course use the pan drippings

Served this Christmas Day (for 11 people) and I had plenty of leftovers. We've enjoyed ham sandwiches (for 11 people) and tonight I am making a ham hash (for 9 people) my mother's special recipe. I plan on freezing the rest for later. I'm not sure I have a pot big enough to hold the bone, but I'm going to try!
